It has been conceived and elaborated with the technique of ``Rimozzare``, (developed by Chef Marziale in 2003) by inserting pasta (tagliolini with basil cream) in a mozzarella ball. The ball is then breaded and fried.

It is based on Mozzarella di Bufala Campana DOP, the main product of the territory.
A Mozzarella is reconstructed (using the “Rimozzare” technique) in the shape of a pizza with crispy “cafone”bread that serves as a topping along with San Marzano tomatoes.

My cooking philosophy is to mix the ingredients of the territory with the classic recipes in order to write the future ones.
